This is one of my all time favorite baked goods, the recipe is so easy
and it is absolutely delicious. I got this recipe from my friends mom a few
years ago and has become one of my go-to treats ever since! I have made it with
blueberries and cranberries as well, so if raspberries are not your favorite
you can easily substitute other things. The topping gives it a little
extra sweetness and crunch, but you can also opt to go without it.
Prep time 15 minutes. Preheat oven to 325 degrees and bake for one hour.
Directions: Mix flour, baking powder, baking soda, sugar, and salt together in a large bowl. Next, beat the two eggs and add to the mixture along with the orange juice. Boil water and mix with butter to melt and avoid chunks. Before adding the raspberries to the mixture, sprinkle them with flour and then gently fold into the bowl. Pour this into pans (recipe makes to loafs)
For the topping, mix together cinnamon, sugar, and flour in a small bowl. Cut the chilled butter into small pieces and add to bowl. Finally, pour the topping over the loaves and put in oven.
